A rich and creamy copycat version of the famous Costco Chocolate Peanut Butter Pie with a crunchy cookie crust, fluffy peanut butter filling, and smooth chocolate ganache topping.

- 24 chocolate sandwich cookies, crushed
- 6 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 1/2 cups heavy whipping cream, divided
- 1 cup semi-sweet chocolate chips
- 1 teaspoon vanilla extract
Instructions
- Line the bottom of a springform pan with parchment paper.
- Mix crushed cookies and melted butter until combined. Press into the pan and chill for 15 minutes.
- In a bowl, beat cream cheese, peanut butter, and powdered sugar until fluffy.
- Whip 1 cup of heavy cream to soft peaks and fold into the peanut butter mixture.
- Spread the peanut butter filling over the chilled crust and refrigerate.
- Heat remaining 1/2 cup cream in a saucepan until simmering. Pour over chocolate chips, let sit 3 minutes, then stir until smooth.
- Let ganache cool slightly, then pour over the peanut butter layer and spread evenly.
- Chill the pie for at least 4 hours or overnight.
- Run a warm knife around the edges before removing the springform ring and slicing to serve.

- Use shelf-stable creamy peanut butter for the best texture.
- Let all dairy ingredients come to room temperature before mixing.
- Chill each layer before adding the next for clean, defined lines.
