Instructions
- Preheat oven to 350 degrees Fahrenheit and grease two 9 inch round cake pans.
- Whisk together flour, baking powder, and salt.
- Cream butter and sugar until light and fluffy. Add eggs one at a time. Stir in coconut milk, lime zest, and lime juice.
- Gradually mix dry ingredients into wet ingredients until just combined. Fold in shredded coconut.
- Divide batter between pans and bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
- Cool completely before frosting.
