Description

Ingredients

  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup dark brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a large bowl, cream the butter and brown sugar until fluffy. Beat in the egg, molasses, and vanilla.
  4. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  5. Divide the dough into two discs, wrap in plastic wrap, and chill for at least 2 hours.
  6. Roll dough on a floured surface to 1/4 inch thick. Cut into shapes with cookie cutters.
  7. Place cookies on baking sheets 1 inch apart and bake for 8-10 minutes.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Decorate with icing and enjoy!
