Description

A soft and moist cinnamon roll poke cake infused with a rich cinnamon sugar filling and topped with a smooth cream cheese glaze, perfect for brunch or dessert.


Ingredients

  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1/2 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and grease a 9 by 13 inch baking dish.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix eggs, whole milk, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry ingredients and mix until just blended.
  5. Pour batter into prepared baking dish and smooth the top evenly.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake is still warm, use the handle of a wooden spoon to poke holes evenly across the surface.
  8. In a bowl, mix brown sugar, ground cinnamon, and heavy cream until smooth, then pour evenly over the warm cake allowing it to soak into the holes.
  9. In a separate bowl, beat cream cheese, powdered sugar, and 2 tablespoons milk until smooth and creamy.
  10. Spread the cream cheese glaze evenly over the slightly cooled cake, slice, and serve.

Notes

  • Poke holes while the cake is warm so the cinnamon mixture absorbs fully.
  • Allow the glaze to set slightly before slicing for clean pieces.
  • Store covered in the refrigerator for up to four days.
