Description

  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh orange zest
  • 1 1/2 cups (180 g) powdered sugar
  • 1/4 cup (56 g) unsalted butter, softened (for filling)
  • 1 tablespoon fresh orange juice
  • 1 tablespoon heavy cream

Instructions

  1. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, beat softened butter, granulated sugar, and brown sugar until creamy.
  4. Add egg, vanilla extract, and orange zest to the butter mixture and mix until combined.
  5. Gradually add dry ingredients to the wet mixture and mix just until incorporated.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and place 2 inches apart on prepared baking sheets. Slightly flatten each ball.
  7. Bake for 9 to 11 minutes until edges are set and centers remain soft. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the filling, beat powdered sugar and softened butter until smooth. Add fresh orange juice and heavy cream, mixing until light and fluffy.
  9. Spread or pipe filling onto the flat side of one cooled cookie and top with another to form a sandwich.
