Ingredients
- Chicken wings, 2 pounds
- Smoked sausage, sliced, 1 pound
- Baby potatoes, 1 pound
- Corn on the cob, halved, 4 ears
- Onion, quartered, 1 large
- Garlic cloves, smashed, 6
- Old Bay seasoning, 3 tablespoons
- Cajun seasoning, 2 tablespoons
- Bay leaves, 2
- Lemons, halved, 2
- Kosher salt, 1 tablespoon
- Black pepper, 1 teaspoon
- Water, enough to cover, about 12 cups
Instructions
- Bring a large stockpot of water to a boil, enough to cover all ingredients, about 12 cups.
- Add onion, garlic, Old Bay, Cajun seasoning, bay leaves, salt, pepper, and lemon halves. Simmer 10 minutes to build a flavorful broth.
- Add baby potatoes and cook until nearly tender, about 10 minutes.
- Add sliced smoked sausage and simmer 5 minutes to release its smoky oils.
- Add chicken wings and corn, then simmer gently until wings are cooked through, 25 to 30 minutes.
- Serve family-style straight from the pot or on a parchment-lined platter.
Notes
- For milder heat, reduce Cajun seasoning and add more herbs.
- For extra brightness, finish with fresh lemon juice and chopped parsley.
- Let the broth simmer before adding potatoes so the aromatics fully infuse.
