Description

A cozy one-pan meal combining sweet apples, savory chicken sausage, and golden potatoes, all caramelized to perfection in a single skillet.


Ingredients

  • 12 ounces Chicken Sausage, sliced into coins
  • 2 medium Apples, cored and sliced
  • 1 pound Baby Potatoes, halved
  • 1 large Onion, thinly sliced
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1/3 cup Chicken Broth
  • 1 tablespoon Fresh Thyme
  • Salt & Black Pepper, to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and let it shimmer.
  2. Add the sliced chicken sausage and cook until browned on both sides, about 5–7 minutes. Remove and set aside.
  3. In the same skillet, add another tablespoon of oil. Toss in the onions and potatoes. Cook for about 8–10 minutes until the onions are soft and the potatoes begin to crisp.
  4. Add the apples and garlic. Sauté for another 3–4 minutes until the apples are golden but not mushy.
  5. Pour in the chicken broth and return the sausage to the pan. Add thyme, salt, and pepper. Stir everything together and let it simmer uncovered for 3–5 minutes until the liquid slightly reduces.
  6. Taste and adjust seasoning if needed. Add a pat of butter or drizzle of maple syrup for an extra layer of flavor if desired.
  7. Serve hot, directly from the skillet, maybe with a hunk of crusty bread or over a bed of rice or greens.

Notes

  • Use firm apples like Honeycrisp or Granny Smith for best texture.
  • Deglaze the pan with broth to lift all the flavorful browned bits.
  • Finish with fresh thyme or a splash of apple cider vinegar for added depth.
