- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup toasted pine nuts
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- If needed, cook the chicken in a lightly oiled skillet over medium heat for 6 to 7 minutes per side until fully cooked. Let it rest, then slice.
- In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper until combined.
- Place chopped romaine lettuce in a large mixing bowl.
- Add sliced chicken, cherry tomatoes, red onion, and toasted pine nuts over the lettuce.
- Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
- Top with shaved Grana Padano and give a final light toss.
- Serve immediately while fresh and crisp.
