Instructions

  1. If needed, cook the chicken in a lightly oiled skillet over medium heat for 6 to 7 minutes per side until fully cooked. Let it rest, then slice.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper until combined.
  3. Place chopped romaine lettuce in a large mixing bowl.
  4. Add sliced chicken, cherry tomatoes, red onion, and toasted pine nuts over the lettuce.
