Description

Crispy breaded chicken topped with rich marinara sauce and melted mozzarella, finished in the oven for a golden bubbly finish. This comforting Italian American classic is perfect for serving over pasta or enjoying on its own.

Ingredients

Scale
  • 2 large boneless skinless chicken breasts (about 1 pound total), pounded to even thickness
  • 1/2 cup all purpose flour (about 60 grams)
  • 2 large eggs, beaten
  • 1 cup Italian seasoned breadcrumbs (about 120 grams)
  • 1/2 cup grated Parmesan cheese (50 grams)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3 tablespoons olive oil
  • 2 cups marinara sauce (about 480 milliliters)
  • 1 1/2 cups shredded mozzarella cheese (about 170 grams)
  • Fresh basil leaves, small handful for garnish

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. In one shallow bowl, combine flour with salt and black pepper. In a second bowl, place the beaten eggs. In a third bowl, mix breadcrumbs, grated Parmesan cheese, and garlic powder.
  3. Heat olive oil in a large skillet over medium heat.
  4. Dredge each chicken breast in the flour mixture, dip into the beaten eggs, then coat thoroughly in the breadcrumb mixture, pressing gently so it adheres.
  5. Place chicken in the skillet and cook for 3 to 4 minutes per side until golden brown.
  6. Transfer browned chicken to a baking dish. Spoon marinara sauce evenly over each piece and top with shredded mozzarella cheese.
  7. Bake for 15 to 20 minutes, until cheese is melted and bubbly and the internal temperature reaches 165 degrees Fahrenheit.
  8. Remove from oven, let rest for 5 minutes, garnish with fresh basil, and serve warm.

Notes

  • Pound the chicken evenly to ensure consistent cooking.
  • Avoid adding too much sauce before baking to keep the crust crisp.
  • Freshly grated Parmesan melts and flavors better than pre grated.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
