- 4 boneless skinless chicken fillets (about 600 grams)
- 1 1/2 cups heavy cream
- 1 cup chicken broth
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 teaspoon dried thyme
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat a large skillet over medium heat for a few minutes.
- Season the chicken fillets evenly on both sides with salt and black pepper.
- Add olive oil and butter to the skillet. Once hot, place the chicken in the pan.
- Sear the chicken for 5 to 6 minutes per side until golden brown, then remove and set aside. In the same pan, sauté the onion for 3 minutes, add garlic and cook for 1 minute. Pour in the chicken broth and simmer for 3 minutes, then stir in heavy cream and dried thyme.
- Return the chicken to the skillet, reduce heat to low, and simmer for 15 minutes until the sauce thickens and the chicken is fully cooked.
- Taste and adjust seasoning if needed. Sprinkle chopped parsley over the top.
- Serve warm with the creamy sauce spooned generously over the chicken.
Notes
- Simmer the sauce uncovered to help it thicken properly.
- If the sauce becomes too thick, add a splash of warm broth.
- Use freshly ground pepper for brighter flavor.
