  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large yellow onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 small flour tortillas

Instructions

  1. Heat a large skillet over medium high heat until hot.
  2. In a bowl, toss the sliced chicken with olive oil, lime juice, cumin, chili powder, paprika, garlic powder, salt, and black pepper until evenly coated.
  3. Add the seasoned chicken to the hot skillet in a single layer and cook for 5 to 7 minutes, stirring occasionally, until cooked through and lightly charred. Remove from the skillet and set aside.
  4. In the same skillet, add the sliced red bell pepper, green bell pepper, and yellow onion. Sauté for 4 to 5 minutes until tender but still slightly crisp.
  5. Return the cooked chicken to the skillet and toss everything together for 1 to 2 minutes until heated through.
  6. Warm the flour tortillas separately in a dry skillet or microwave.
  7. Serve the chicken and vegetable mixture immediately in warm tortillas and enjoy.

  • For deeper flavor, marinate the chicken in the seasoning mixture for up to 24 hours before cooking.
