Description

Warm flatbreads or bagels layered with juicy marinated chicken, smoky chorizo, golden grilled halloumi and a sticky hot honey drizzle, balanced with fresh salad and herbs for a sweet, spicy, and savory handheld feast.

  • 2 large chicken breasts, cut into strips (about 500 g)
  • 150 g chorizo, sliced (use gluten-free or plant-based chorizo for dietary needs)
  • 200 g halloumi cheese, sliced into thick slabs
  • 4 gluten-free flatbreads or gluten-free bagels (or regular flatbreads or bagels if not gluten-free)
  • 3 tablespoons hot honey (or chili-infused maple syrup)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice
  • 2 cups mixed salad leaves
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • A handful fresh coriander or parsley, chopped

Instructions

  1. Preheat Your Equipment: Heat a skillet or grill pan over medium-high heat until hot.
  2. Combine Ingredients: In a bowl, mix chicken strips with olive oil, minced garlic, paprika, and lemon juice. Marinate for 30 minutes if time allows.
  3. Prepare Your Cooking Vessel: Lightly oil the pan or skillet to prevent sticking and ensure even browning.
  4. Assemble the Dish: Cook chicken in the hot pan until golden and cooked through, about 6 to 8 minutes. Remove and keep warm. In the same pan, fry chorizo slices until crisp, about 3 to 4 minutes. Then add halloumi slices and cook until golden on both sides, about 1 to 2 minutes per side.
  5. Cook to Perfection: Warm flatbreads or bagels briefly in the skillet or oven until soft and pliable, about 1 to 2 minutes per side for flatbreads or 3 to 5 minutes in a 180°C/350°F oven for bagels.
  6. Finishing Touches: Layer mixed salad leaves on each flatbread or split bagel, top with cooked chicken, chorizo, and halloumi. Scatter sliced red onion, halved cherry tomatoes, and chopped herbs. Drizzle each with hot honey.
  7. Serve and Enjoy: Fold flatbreads or close bagels, serve warm with extra hot honey on the side, and enjoy immediately.
