Description

  • 3 medium zucchini, sliced lengthwise into thick steaks
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a small bowl, combine olive oil, minced garlic, salt, black pepper, and Italian seasoning.
  3. Arrange the zucchini steaks in a single layer on the prepared baking sheet.
  4. Brush the zucchini evenly with the seasoned oil mixture.
  5. Roast for 15 minutes until the zucchini begins to soften.
  6. Remove from the oven and sprinkle shredded mozzarella and grated Parmesan evenly over each steak.
