- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese

Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a small bowl, combine olive oil, minced garlic, salt, black pepper, and Italian seasoning.
- Arrange the zucchini steaks in a single layer on the prepared baking sheet.
- Brush the zucchini evenly with the seasoned oil mixture.
- Roast for 15 minutes until the zucchini begins to soften.
- Remove from the oven and sprinkle shredded mozzarella and grated Parmesan evenly over each steak.
- Return to the oven and bake for 5 to 7 minutes until the cheese is melted and lightly golden.
- Remove from the oven, sprinkle with chopped fresh parsley, and serve warm.
Notes
- Pat the zucchini dry before seasoning to reduce excess moisture.
- Add the cheese during the last few minutes of baking to prevent over browning.
- For extra golden color, broil briefly at the end while watching carefully.
