Crispy oven-baked fries topped with a rich homemade cheddar and mozzarella cheese sauce, finished with fresh green onions and jalapeno for the ultimate comfort food experience.

Ingredients

Scale
  • 4 large russet potatoes, about 900 grams, cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1 1/2 cups whole milk (360 milliliters)
  • 1 tablespoon cornstarch dissolved in 1 tablespoon water
  • 2 cups cheddar cheese, 200 grams, freshly shredded
  • 1 cup mozzarella cheese, 100 grams, shredded
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons green onions, thinly sliced
  • 1 small jalapeno, thinly sliced (optional)

Instructions

  1. Preheat oven to 220 degrees Celsius (425 degrees Fahrenheit) and line a baking sheet with parchment paper.
  2. Toss cut potatoes with olive oil, salt, and black pepper in a large bowl until evenly coated.
  3. Spread fries in a single layer on the baking sheet without overcrowding.
  4. Bake for 25 to 30 minutes, flipping halfway through, until golden and crispy.
  5. In a saucepan over medium heat, melt butter, then stir in milk and bring to a gentle simmer.
  6. Add the cornstarch mixture and whisk until slightly thickened.
  7. Lower heat and stir in cheddar, mozzarella, garlic powder, and paprika until smooth.
  8. Remove fries from oven and pour warm cheese sauce evenly over the top.
  9. Sprinkle with green onions and jalapeno, then serve immediately.

Notes

  • Use freshly shredded cheese for a smoother sauce texture.
  • Soak cut potatoes in cold water for 30 minutes before baking for extra crispiness.
  • Reheat leftovers in the oven to maintain texture.
