- 2 tablespoons green onions, thinly sliced
- 1 small jalapeno, thinly sliced (optional)
Instructions
- Preheat oven to 220 degrees Celsius (425 degrees Fahrenheit) and line a baking sheet with parchment paper.
- Toss cut potatoes with olive oil, salt, and black pepper in a large bowl until evenly coated.
- Spread fries in a single layer on the baking sheet without overcrowding.
- Bake for 25 to 30 minutes, flipping halfway through, until golden and crispy.
- In a saucepan over medium heat, melt butter, then stir in milk and bring to a gentle simmer.
- Add the cornstarch mixture and whisk until slightly thickened.
- Lower heat and stir in cheddar, mozzarella, garlic powder, and paprika until smooth.
- Remove fries from oven and pour warm cheese sauce evenly over the top.
- Sprinkle with green onions and jalapeno, then serve immediately.
