  • 12 ounces dried flat rice phở noodles
  • 1 pound beef sirloin, thinly sliced
  • 1 ½ cups shredded mozzarella cheese
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup fresh bean sprouts
  • 3 scallions, sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons vegetable oil
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste

Instructions

  1. Heat a large skillet or wok over medium high heat until hot.
  2. Soak the dried rice phở noodles in warm water for about 10 minutes until just tender, then drain. Season the sliced beef with black pepper and a pinch of salt.
  3. Add vegetable oil to the hot skillet. Sear the beef for 2 to 3 minutes until browned, then remove from the pan and set aside.
  4. In the same skillet, add the sliced onion and minced garlic. Cook for 2 to 3 minutes until softened and fragrant. Return the beef to the pan, then add the drained noodles, soy sauce, and oyster sauce. Toss well to coat evenly.
  5. Stir fry for 4 to 5 minutes, allowing the noodles to absorb the sauce and heat through. Add the bean sprouts and scallions and toss briefly to keep them slightly crisp.
  6. Reduce the heat to low and sprinkle the shredded mozzarella over the noodles. Cover for 1 to 2 minutes until the cheese melts.
  7. Gently toss to create cheesy strands and serve immediately while hot.

Notes

  • Use high heat while stir frying to prevent soggy noodles.
  • Do not over soak the noodles or they may become mushy.
  • Freshly shredded mozzarella melts more smoothly than pre shredded.
  • Adjust soy sauce and salt to taste before serving.
