Instructions
- Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- Cut the cauliflower into florets and pulse in a food processor until rice sized pieces form.
- Microwave the riced cauliflower for 5 minutes until tender, then let it cool slightly.
- Transfer the cauliflower to a clean kitchen towel and squeeze out as much excess moisture as possible.
- In a mixing bowl, combine the drained cauliflower, eggs, shredded mozzarella, grated Parmesan, garlic powder, dried oregano, salt, and black pepper. Mix until evenly combined.
- Spread the mixture evenly onto the prepared baking sheet, shaping it into a rectangle about 1/2 inch thick.
- Bake for 20 to 25 minutes, until golden and firm to the touch.
- Allow the bread to cool for 5 to 10 minutes before slicing and serving.
