Savory, buttery cheese cookies shaped like festive dragons with a crisp edge and tender crumb, perfect for celebrations or everyday snacking.

Ingredients

Scale
  • 120 grams unsalted butter, softened
  • 150 grams cheddar cheese, finely grated
  • 180 grams all purpose flour
  • 20 grams cornstarch
  • 1 teaspoon salt
  • 0.5 teaspoon white pepper
  • 1 large egg yolk

Instructions

  1. Preheat oven to 175 degrees Celsius and line a baking sheet with parchment paper.
  2. Cream softened butter until smooth, then mix in grated cheese until combined. Add egg yolk and blend well.
  3. In a separate bowl whisk together flour, cornstarch, salt, and white pepper. Gradually add to the butter mixture and mix until a soft dough forms.
  4. Roll dough on a lightly floured surface to 0.5 centimeter thickness.
  5. Cut into dragon shapes and place on prepared baking sheet with slight spacing.
  6. Bake for 12 to 15 minutes until edges are golden.
  7. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes

  • Chill the dough for 20 minutes before rolling for better shape definition.
  • Sprinkle extra grated cheese on top before baking for added crunch.
  • Store in an airtight container at room temperature for up to 5 days.
