  • 1 cup pineapple chunks, drained
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 1.5 cups shredded mozzarella cheese
  • 2 large eggs, lightly beaten
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Preheat the oven to 190 degrees Celsius and lightly grease a medium baking dish.
  2. Heat vegetable oil in a large skillet over medium heat and add the beaten eggs, stirring until softly scrambled.
  3. Add the cooked rice, peas and carrots, pineapple chunks, soy sauce, sesame oil, salt, and black pepper. Stir well until everything is evenly combined and heated through.
  4. Transfer the rice mixture into the prepared baking dish and spread it out evenly.
  5. Sprinkle the shredded mozzarella cheese evenly over the top.
  6. Bake uncovered for 20 minutes, until the cheese is melted and lightly golden.
  7. Remove from the oven, let rest for 5 minutes, garnish with green onions, and serve warm.
