- 1 cup pineapple chunks, drained
- 1 cup frozen peas and carrots
- 3 green onions, sliced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 1.5 cups shredded mozzarella cheese
- 2 large eggs, lightly beaten
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Preheat the oven to 190 degrees Celsius and lightly grease a medium baking dish.
- Heat vegetable oil in a large skillet over medium heat and add the beaten eggs, stirring until softly scrambled.
- Add the cooked rice, peas and carrots, pineapple chunks, soy sauce, sesame oil, salt, and black pepper. Stir well until everything is evenly combined and heated through.
- Transfer the rice mixture into the prepared baking dish and spread it out evenly.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Bake uncovered for 20 minutes, until the cheese is melted and lightly golden.
- Remove from the oven, let rest for 5 minutes, garnish with green onions, and serve warm.
