Description

A sweet and savory baked rice dish made with juicy pineapple, colorful vegetables, fluffy jasmine rice, and topped with melted mozzarella cheese for a comforting tropical twist.


Ingredients

  • 4 cups cooked jasmine rice, preferably day old
  • 1 ½ cups fresh pineapple chunks
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup green peas
  • ½ cup diced carrots
  • 1 medium red bell pepper, diced
  • 2 large eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 3 green onions, sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat vegetable oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the lightly beaten eggs and scramble until just set.
  4. Add diced carrots, green peas, and red bell pepper. Cook for 3 to 4 minutes until slightly tender.
  5. Stir in the cooked jasmine rice and pineapple chunks.
  6. Add soy sauce and sesame oil. Season with salt and black pepper. Toss gently until evenly combined.
  7. Transfer the rice mixture into a baking dish or hollowed pineapple shells.
  8. Sprinkle shredded mozzarella cheese evenly over the top.
  9. Bake for 12 to 15 minutes until the cheese is melted and lightly golden.
  10. Remove from oven, garnish with sliced green onions, and serve warm.

Notes

  • Use day old rice for the best texture and to prevent sogginess.
  • Drain pineapple well if using canned to avoid excess moisture.
  • Shred your own mozzarella for smoother melting.
