- 4 cups cooked jasmine rice, preferably day old
- 1 ½ cups fresh pineapple chunks
- 1 ½ cups shredded mozzarella cheese
- ½ cup green peas
- ½ cup diced carrots
- 1 medium red bell pepper, diced
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 3 green onions, sliced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons vegetable oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat vegetable oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the lightly beaten eggs and scramble until just set.
- Add diced carrots, green peas, and red bell pepper. Cook for 3 to 4 minutes until slightly tender.
- Stir in the cooked jasmine rice and pineapple chunks.
- Add soy sauce and sesame oil. Season with salt and black pepper. Toss gently until evenly combined.
- Transfer the rice mixture into a baking dish or hollowed pineapple shells.
- Sprinkle shredded mozzarella cheese evenly over the top.
- Bake for 12 to 15 minutes until the cheese is melted and lightly golden.
- Remove from oven, garnish with sliced green onions, and serve warm.
Notes
- Use day old rice for the best texture and to prevent sogginess.
- Drain pineapple well if using canned to avoid excess moisture.
- Shred your own mozzarella for smoother melting.
