Description

- 1 sheet Puff Pastry, thawed
- 2 large Leeks, thinly sliced and cleaned
- 2 cups Fresh Spinach, roughly chopped
- 4 ounces Goat Cheese, crumbled
- 2 tablespoons Olive Oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1 Egg, beaten (for brushing crust)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Heat olive oil in a pan over medium heat. Add sliced leeks with a pinch of salt and cook for about 15 minutes until golden and soft. Add spinach and sauté for 2–3 minutes until wilted. Let cool slightly.
- Place the puff pastry on the prepared baking sheet. Roll slightly if needed.
- Spoon the leek and spinach mixture evenly over the pastry, leaving a 1-inch border. Top with crumbled goat cheese.
- Fold the pastry edges slightly to create a border and brush with beaten egg.
- Bake for 25 to 30 minutes, or until crust is golden and cheese is bubbly.
- Cool for 5 minutes before slicing. Garnish with fresh herbs if desired and serve warm.
Notes
- Don’t overload the tart to ensure even baking.
- Use full-fat goat cheese for creaminess.
- Let leeks caramelize slowly for better flavor.
