Description

A flaky, golden tart filled with sweet caramelized leeks, earthy spinach, and tangy goat cheese. Perfect for brunch, lunch, or a light dinner.


Ingredients

  • 1 sheet Puff Pastry, thawed
  • 2 large Leeks, thinly sliced and cleaned
  • 2 cups Fresh Spinach, roughly chopped
  • 4 ounces Goat Cheese, crumbled
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 Egg, beaten (for brushing crust)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a pan over medium heat. Add sliced leeks with a pinch of salt and cook for about 15 minutes until golden and soft. Add spinach and sauté for 2–3 minutes until wilted. Let cool slightly.
  3. Place the puff pastry on the prepared baking sheet. Roll slightly if needed.
  4. Spoon the leek and spinach mixture evenly over the pastry, leaving a 1-inch border. Top with crumbled goat cheese.
  5. Fold the pastry edges slightly to create a border and brush with beaten egg.
  6. Bake for 25 to 30 minutes, or until crust is golden and cheese is bubbly.
  7. Cool for 5 minutes before slicing. Garnish with fresh herbs if desired and serve warm.

  • Don’t overload the tart to ensure even baking.
  • Use full-fat goat cheese for creaminess.
  • Let leeks caramelize slowly for better flavor.
