- 40 mini pretzels
- 20 soft caramels
- 1 large green apple, diced into small cubes
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
- Pinch of sea salt
Instructions
- Line a baking sheet with parchment paper to prepare your workspace.
- Melt the soft caramels in a microwave-safe bowl, heating in 20-second intervals until smooth, then stir in the diced apple pieces.
- Lay half of the pretzels on the baking sheet and spoon a small amount of the caramel-apple mixture onto each one.
- Top each with another pretzel to form a sandwich and press lightly.
- Chill in the refrigerator for about 10 minutes to allow the bites to set.
- Melt chocolate chips with coconut oil, drizzle over the chilled bites, and sprinkle lightly with sea salt.
- Chill for another 5 minutes or until the chocolate is firm, then serve or store in the fridge.
Notes
- Use firm, fresh apples to prevent soggy bites.
- Don’t overfill with caramel or it may ooze out during chilling.
- Store leftovers in the fridge for up to 4 days or freeze for up to 2 weeks.
