- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a small saucepan over low heat, melt the butter, then stir in olive oil, garlic, Cajun seasoning, paprika, salt, and black pepper.
- Lightly grease a baking dish and arrange the potato rounds in a single layer.
- Pour the spiced butter evenly over the potatoes, coating each piece.
- Bake uncovered for 30 minutes.
- Carefully pour the chicken broth into the baking dish and spoon some liquid over the potatoes.
- Return to the oven and bake for another 25 minutes.
- Baste once more and bake an additional 10 minutes until golden and fork-tender.
- Remove from the oven, sprinkle with fresh parsley, and serve hot.
