- 1 small butternut squash, peeled and thinly sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 ounces goat cheese, crumbled
- 1 cup shredded mozzarella
- 10 fresh sage leaves
- Salt and pepper to taste
- 1 handful arugula
- Cornmeal or flour for dusting
Instructions
- Preheat your oven to 475°F (245°C). If using a pizza stone, place it inside the oven during preheating.
- In a bowl, toss the thinly sliced squash with olive oil, minced garlic, salt, and pepper.
- Dust a baking sheet or pizza peel with cornmeal or flour to prevent sticking.
- Stretch the dough onto the pan. Layer with shredded mozzarella, then evenly distribute the seasoned squash. Top with crumbled goat cheese and sage leaves.
- Bake for 12–15 minutes or until the crust is golden and the cheese is bubbly and slightly browned.
- Remove from the oven and let it cool slightly. Top with fresh arugula before serving.
- Slice, serve, and enjoy warm.
