  • 1 medium onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 6 cups vegetable broth
  • 1 cup cooked chickpeas
  • 2 cups green cabbage, shredded
  • 100 grams glass noodles, soaked
  • 6 vegetable samusas, cooked and chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the sliced onion and minced garlic, cooking until soft and fragrant.
  3. Stir in the ground turmeric and cook briefly to release its aroma.
  4. Pour in the vegetable broth, then add the chickpeas and shredded cabbage.
  5. Bring the soup to a gentle simmer and cook until the cabbage softens.
  6. Add the soaked glass noodles and chopped samusas to the pot.
  7. Cook until the noodles are tender and the samusas have absorbed some broth.
  8. Season with salt and black pepper, then remove from heat.
  9. Ladle into bowls and garnish with fresh cilantro before serving.

Notes
