Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 1/2 cup all purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 3/4 cup buffalo sauce
  • 1/2 cup blue cheese crumbles
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • Pinch of salt and black pepper for the sauce

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl whisk together the all purpose flour, garlic powder, paprika, salt, black pepper, and milk until smooth.
  3. Add the cauliflower florets to the batter and toss until evenly coated.
  4. Arrange the coated florets in a single layer on the prepared baking sheet.
  5. Bake for 20 minutes, flipping halfway through, until lightly golden and crisp.
  6. Remove from the oven and toss the cauliflower with buffalo sauce until evenly coated.
  7. Return to the oven and bake for an additional 10 minutes until the sauce is set and slightly caramelized.
  8. In a small bowl mix blue cheese crumbles, sour cream, lemon juice, and a pinch of salt and black pepper until creamy.
  9. Serve the buffalo cauliflower hot with blue cheese sauce on the side.

Notes

  • Do not overcrowd the baking sheet to ensure crisp texture.
  • Pat the cauliflower dry before coating for better batter adhesion.
  • The blue cheese sauce can be made up to 3 days ahead and stored refrigerated.
  • For extra heat, drizzle additional buffalo sauce before serving.
