Description
Bruschetta Chicken Pasta made with grilled chicken, juicy cherry tomatoes, fresh basil, mozzarella, and a light balsamic olive oil dressing.

- 1 1/2 pounds boneless skinless chicken breast
- 12 ounces penne or rotini pasta
- 2 cups cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 1 cup fresh mozzarella, cubed
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Drain.
- Season chicken with salt and black pepper.
- Cook chicken in a grill pan over medium heat for 6 to 7 minutes per side until fully cooked. Let rest and slice.
- In a large bowl combine warm pasta, cherry tomatoes, garlic, olive oil, and balsamic vinegar. Toss well.
- Add sliced chicken and mozzarella cubes. Toss gently.
- Fold in fresh basil and adjust seasoning.
- Serve warm or at room temperature.
Notes
- Salt pasta water generously.
- Let chicken rest before slicing.
- Add basil at the end for freshness.
- Drizzle extra olive oil before serving if needed.
