Description

Chewy, nutty blondies made with browned butter, toasted pecans, and melty dark chocolate chunks, perfect for sharing or packing in lunchboxes.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, browned and cooled
  • 1 1/2 cups packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup pecans, toasted and chopped
  • 1 cup dark chocolate chunks, chopped from a bar

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy lifting.
  2. In a saucepan over medium heat, melt the butter and cook until it browns, smelling nutty and turning a deep golden color. Remove from heat and let cool slightly. In a mixing bowl, combine the browned butter with brown sugar and granulated sugar, whisking until smooth. Add the eggs one at a time, whisking until glossy, then whisk in the vanilla.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. Fold in the toasted, chopped pecans and dark chocolate chunks, reserving a small handful to sprinkle on top of the batter.
  5. Spread the batter evenly into the prepared 8×8-inch pan and sprinkle the reserved pecans and chocolate chunks over the top. Bake for 25 to 30 minutes, until the edges are golden and the center is just set with moist crumbs.
  6. Remove from oven and cool completely in the pan on a wire rack. Use the parchment overhang to lift the blondies from the pan.
  7. Slice into 16 bars and serve. Store cooled blondies in an airtight container at room temperature for up to 4 days or freeze wrapped for up to 2 months.

Notes

  • Toast the pecans before adding them to boost their flavor.
  • Use chopped chocolate instead of chips for uneven melty pockets.
  • Let the blondies cool completely before slicing to get clean squares.
  • For a gourmet touch, sprinkle flaky sea salt on top before baking.
