Description

Soft and buttery brioche French toast with a golden crisp exterior and tender custardy center, lightly spiced with cinnamon and vanilla, then topped with fresh berries and maple syrup.


Ingredients

  • 4 large eggs
  • 1 cup whole milk
  • 2 tablespoons granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon

  • 2 tablespoons unsalted butter
  • Maple syrup, about 1 tablespoon per slice for serving
  • 1 cup mixed fresh strawberries and blueberries
  • 1 tablespoon powdered sugar for dusting

Instructions

  1. Preheat a nonstick skillet over medium heat.
  2. In a large mixing bowl, whisk together eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until smooth.
  3. Add a small amount of unsalted butter to the skillet and allow it to melt, coating the surface lightly.
  4. Dip each slice of brioche bread into the custard mixture, soaking about 20 seconds per side.
  5. Place soaked slices into the skillet and cook for 3 to 4 minutes per side until golden brown and slightly crisp.
  6. Transfer cooked slices to a plate and lightly dust with powdered sugar.
  7. Top with fresh berries and drizzle with maple syrup before serving warm.

Notes

  • Use slightly stale brioche so it absorbs the custard without falling apart.
