- 2 tablespoons unsalted butter
- Maple syrup, about 1 tablespoon per slice for serving
- 1 cup mixed fresh strawberries and blueberries
- 1 tablespoon powdered sugar for dusting
Instructions
- Preheat a nonstick skillet over medium heat.
- In a large mixing bowl, whisk together eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until smooth.
- Add a small amount of unsalted butter to the skillet and allow it to melt, coating the surface lightly.
- Dip each slice of brioche bread into the custard mixture, soaking about 20 seconds per side.
- Place soaked slices into the skillet and cook for 3 to 4 minutes per side until golden brown and slightly crisp.
- Transfer cooked slices to a plate and lightly dust with powdered sugar.
- Top with fresh berries and drizzle with maple syrup before serving warm.
Notes
- Use slightly stale brioche so it absorbs the custard without falling apart.
- Do not overcrowd the pan to ensure even browning.
- Keep cooked slices warm in a low oven if preparing multiple batches.
- Freeze leftovers in an airtight container for up to 2 months and reheat in a toaster or skillet.
