Description

A warm and satisfying breakfast sandwich made with fluffy scrambled eggs, melted cheddar cheese, fresh spinach, and a creamy herbed cream cheese spread, all tucked inside a lightly toasted brioche bun. Perfect for a cozy morning or relaxed brunch.

Ingredients

Scale
  • 2 brioche buns
  • 4 large eggs
  • 4 slices cheddar cheese
  • 4 tablespoons cream cheese, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 cup fresh spinach leaves
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place a nonstick skillet over low to medium heat and allow it to warm gently.
  2. In a small bowl, mix the softened cream cheese with chopped parsley and chives until smooth and evenly blended.
  3. Add the butter to the skillet and let it melt completely, coating the surface.
  4. In a separate bowl, whisk the eggs with salt and black pepper until combined.
  5. Pour the eggs into the skillet and cook slowly, stirring gently with a spatula until soft and fluffy.
  6. Lightly toast the brioche buns while the eggs cook.
  7. Place a slice of cheddar cheese on each bottom bun half.
  8. Spoon the warm scrambled eggs over the cheese so it melts slightly, then add fresh spinach on top.
  9. Spread the herbed cream cheese generously on the top bun halves.
  10. Close the sandwiches, press gently, and serve warm.

Notes

  • Cook the eggs slowly over low heat to keep them soft and creamy.
  • Use room temperature cream cheese for easier mixing and spreading.
  • For extra freshness, add a squeeze of lemon juice to the herb mixture.
  • Assemble just before serving for the best texture.
