Description

A quick and flavorful dish featuring crispy, blistered green beans and golden-seared halloumi tossed with lemon zest and garlic. Salty, savory, and endlessly satisfying.


Ingredients

  • 1 pound green beans, trimmed
  • 8 ounces halloumi cheese, cubed
  • 2 tablespoons olive oil
  • 2 cloves garlic, thinly sliced
  • Zest of 1 lemon
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  1. Heat a large skillet over medium-high heat until very hot.
  2. Toss green beans with 1 tablespoon olive oil, salt, and pepper.
  3. Place green beans in skillet in a single layer. Cook undisturbed for 2–3 minutes until blistered, then toss and cook for 2–3 more minutes. Remove and set aside.
  4. Add remaining olive oil to the skillet and cook halloumi cubes until golden on all sides, about 5–7 minutes. Add garlic during the last minute of cooking.
  5. Return green beans to the skillet and toss with lemon zest and crushed red pepper flakes, if using.
  6. Serve warm with additional lemon zest or herbs if desired.

  • Dry the green beans well to ensure proper blistering.
  • Use a cast iron or stainless-steel pan for best results.
  • Don’t overcrowd the skillet — work in batches if needed.
  • Serve over grains or with a poached egg for a complete meal.
