Description
A quick and flavorful dish featuring crispy, blistered green beans and golden-seared halloumi tossed with lemon zest and garlic. Salty, savory, and endlessly satisfying.

- 1 pound green beans, trimmed
- 8 ounces halloumi cheese, cubed
- 2 tablespoons olive oil
- 2 cloves garlic, thinly sliced
- Zest of 1 lemon
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper, to taste
Instructions
- Heat a large skillet over medium-high heat until very hot.
- Toss green beans with 1 tablespoon olive oil, salt, and pepper.
- Place green beans in skillet in a single layer. Cook undisturbed for 2–3 minutes until blistered, then toss and cook for 2–3 more minutes. Remove and set aside.
- Add remaining olive oil to the skillet and cook halloumi cubes until golden on all sides, about 5–7 minutes. Add garlic during the last minute of cooking.
- Return green beans to the skillet and toss with lemon zest and crushed red pepper flakes, if using.
- Serve warm with additional lemon zest or herbs if desired.
Notes
- Dry the green beans well to ensure proper blistering.
- Use a cast iron or stainless-steel pan for best results.
- Don’t overcrowd the skillet — work in batches if needed.
- Serve over grains or with a poached egg for a complete meal.
