Instructions
- Rinse the black lentils thoroughly under cold water and set aside.
- Heat olive oil in a large soup pot over medium heat.
- Add the chopped onion, carrots, and celery, then cook until softened and fragrant.
- Stir in the garlic, tomato paste, cumin, and smoked paprika, cooking until aromatic.
- Add the rinsed lentils and vegetable broth, then bring to a gentle simmer.
- Cover and cook for about 30 minutes until the lentils are tender.
- Season with salt and black pepper, stir gently, and adjust seasoning if needed.
- Serve hot, finished with fresh parsley on top.
Notes
- The soup thickens as it cools, add a splash of broth when reheating.
