Instructions

  1. Rinse the black lentils thoroughly under cold water and set aside.
  2. Heat olive oil in a large soup pot over medium heat.
  3. Add the chopped onion, carrots, and celery, then cook until softened and fragrant.
  4. Stir in the garlic, tomato paste, cumin, and smoked paprika, cooking until aromatic.
  5. Add the rinsed lentils and vegetable broth, then bring to a gentle simmer.
  6. Cover and cook for about 30 minutes until the lentils are tender.
  7. Season with salt and black pepper, stir gently, and adjust seasoning if needed.
