Ingredients

  • 3 medium beets, roasted and cubed
  • 1/2 cup feta cheese, crumbled
  • 3 cups arugula
  • 1/4 small red onion, thinly sliced
  • 1/3 cup walnuts, chopped and toasted
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wrap beets in foil, place on a baking tray, and roast for 45 to 60 minutes until fork-tender. Let cool, then peel and cube.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
  4. In a large bowl, toss arugula, red onion, walnuts, and roasted beets.
