- 1 pound ground beef
- 1 large egg
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces mushrooms, sliced
- 1 cup beef broth
- 1/2 cup sour cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- In a bowl, mix ground beef, egg, breadcrumbs, onion, garlic, salt, and pepper until just combined.
- Form meatballs evenly and set aside.
- Heat oil in a skillet over medium heat and sear meatballs until browned on all sides. Remove and set aside.
- Sauté mushrooms in the same skillet until softened.
- Add beef broth, Worcestershire sauce, and paprika, bring to a simmer.
- Return meatballs to skillet, cover, and simmer 10–15 minutes until cooked through.
- Stir in sour cream until smooth, garnish with parsley, and serve over noodles, rice, or mashed potatoes.
Notes
- Do not overmix the meat to prevent tough meatballs.
- Simmer gently to prevent sour cream from curdling.
- Use fresh mushrooms for best flavor.
