Description

  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup fresh parsley, chopped
  • 2 tablespoons capers
  • 2 tablespoons lemon juice
  • 2 anchovy fillets (optional)
  • 1 tablespoon red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Rub ribs with olive oil, garlic, salt, and pepper, and let rest for 15 minutes.
  3. Arrange ribs bone-side down in a large baking dish and cover with foil.
  4. Bake for 2.5 to 3 hours until tender and juicy.
  5. While the ribs cook, blend parsley, capers, anchovies, lemon juice, vinegar, olive oil, and chili flakes into a smooth salsa verde.
  6. Once ribs are cooked, uncover and broil or grill for a few minutes to caramelize the surface.
  7. Serve warm with the salsa verde drizzled on top or on the side.
