- 1.5 pounds boneless skinless chicken breasts, cooked and shredded
- 1 1/2 cups barbecue sauce
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 2 cups coleslaw mix
- 1/3 cup mayonnaise
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 hamburger buns
Instructions
- Preheat oven to 350 degrees Fahrenheit if toasting buns.
- In a bowl, combine coleslaw mix, mayonnaise, lemon juice, salt, and black pepper. Mix well and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3 to 4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
- Add shredded chicken, barbecue sauce, and apple cider vinegar to the skillet. Stir until evenly coated.
- Simmer for 8 to 10 minutes, stirring occasionally, until heated through and slightly thickened.
- Toast hamburger buns in the oven for about 5 minutes if desired.
- Spoon the barbecue chicken mixture onto each bun and top with coleslaw. Serve immediately.
Notes
- Toast the buns lightly to prevent sogginess.
- Taste the sauce before serving and adjust salt or vinegar if needed.
- For added heat, stir in a pinch of chili flakes.
