Description

A comforting tomato based okra stew with tender beef, slowly simmered for rich flavor and a cozy texture.


Ingredients

  • 700 g beef stew meat
  • 500 g fresh okra
  • 1 large onion
  • 4 garlic cloves
  • 3 tablespoons tomato paste
  • 400 g crushed tomatoes
  • 3 tablespoons vegetable oil
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground coriander
  • 2 cups water

Instructions

  1. Heat oil in a pot and sauté onion until soft.
  2. Add garlic and tomato paste and stir until fragrant.
  3. Add beef, salt, pepper, and coriander, stirring well.
  4. Add crushed tomatoes and water, cover and simmer for 45 minutes.
  5. Add okra and simmer uncovered for 20 minutes.
  6. Adjust seasoning and serve hot.

Notes

  • Dry the okra well before cooking.
  • Simmer gently for best texture.
