- 1 pound beef stew meat, cut into medium cubes
- 1 pound fresh okra, trimmed
- 2 tablespoons olive oil
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 2 cups crushed tomatoes
- 1 tablespoon tomato paste
- 2 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground coriander
- 1 tablespoon lemon juice
Instructions
- Season the beef cubes with salt and black pepper.
- Heat olive oil in a large heavy pot over medium heat. Brown the beef on all sides for 5 to 7 minutes, then remove and set aside.
- In the same pot, sauté the chopped onion until soft and translucent. Add minced garlic and cook for 30 seconds.
- Stir in tomato paste, crushed tomatoes, beef broth, and ground coriander.
- Return the beef to the pot and add the trimmed okra.
- Bring to a gentle simmer, partially cover, and cook for 40 to 45 minutes until the beef is tender and the sauce thickens.
- Stir in lemon juice, adjust seasoning if needed, and serve warm.
Notes
- Brown the meat well for deeper flavor.
- Simmer gently to keep the okra intact.
- The stew tastes even better the next day.
