Description

A comforting Middle Eastern okra stew with tender beef simmered in a rich tomato sauce, layered with garlic, coriander, and a splash of lemon for brightness.


Ingredients

  • 1 pound beef stew meat, cut into medium cubes
  • 1 pound fresh okra, trimmed
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups crushed tomatoes
  • 1 tablespoon tomato paste
  • 2 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground coriander
  • 1 tablespoon lemon juice

Instructions

  1. Season the beef cubes with salt and black pepper.
  2. Heat olive oil in a large heavy pot over medium heat. Brown the beef on all sides for 5 to 7 minutes, then remove and set aside.
  3. In the same pot, sauté the chopped onion until soft and translucent. Add minced garlic and cook for 30 seconds.
  4. Stir in tomato paste, crushed tomatoes, beef broth, and ground coriander.
  5. Return the beef to the pot and add the trimmed okra.
  6. Bring to a gentle simmer, partially cover, and cook for 40 to 45 minutes until the beef is tender and the sauce thickens.
  7. Stir in lemon juice, adjust seasoning if needed, and serve warm.

Notes

  • Brown the meat well for deeper flavor.
  • Simmer gently to keep the okra intact.
