Ingredients

  • 4 medium sweet potatoes
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1/2 teaspoon freshly cracked black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub sweet potatoes clean and pat them dry.
  3. Prick each sweet potato several times with a fork.
  4. Rub lightly with olive oil and sprinkle with salt.
  5. Place sweet potatoes directly on the oven rack with a lined baking sheet below to catch drips.
  6. Bake for 45 to 60 minutes until tender and a fork inserts easily.
  7. Remove from oven and let rest for 5 minutes.
  8. Slice open and add butter and black pepper. Serve warm.
