- 4 medium sweet potatoes
- 2 teaspoons olive oil
- 1 teaspoon salt
- 2 tablespoons butter
- 1/2 teaspoon freshly cracked black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub sweet potatoes clean and pat them dry.
- Prick each sweet potato several times with a fork.
- Rub lightly with olive oil and sprinkle with salt.
- Place sweet potatoes directly on the oven rack with a lined baking sheet below to catch drips.
- Bake for 45 to 60 minutes until tender and a fork inserts easily.
- Remove from oven and let rest for 5 minutes.
- Slice open and add butter and black pepper. Serve warm.
