Ingredients

- 2 and 1/4 teaspoons active dry yeast
- 1 cup warm water
- 1 teaspoon salt
- 1 tablespoon sugar
- 3 tablespoons olive oil
- 6 large eggs
- 2 cups fresh spinach
- 3/4 cup crumbled feta cheese
- Pinch of black pepper
Instructions
- Preheat the oven to 375 F.
- Combine warm water, sugar, and yeast, and let sit until foamy.
- Stir in flour, salt, and olive oil, and knead until smooth.
- Line a baking tray with parchment paper.
- Divide dough into six balls and form deep wells in each.
- Wilt spinach in a skillet and divide it into the wells.
- Add feta to each bun and carefully crack an egg into the center.
- Bake for 15 to 18 minutes until egg whites are set.
- Sprinkle black pepper and additional feta if desired.
