Ingredients

  • 3 cups all purpose flour
  • 2 and 1/4 teaspoons active dry yeast
  • 1 cup warm water
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons olive oil
  • 6 large eggs
  • 2 cups fresh spinach
  • 3/4 cup crumbled feta cheese
  • Pinch of black pepper

Instructions

  1. Preheat the oven to 375 F.
  2. Combine warm water, sugar, and yeast, and let sit until foamy.
  3. Stir in flour, salt, and olive oil, and knead until smooth.
  4. Line a baking tray with parchment paper.
  5. Divide dough into six balls and form deep wells in each.
  6. Wilt spinach in a skillet and divide it into the wells.
  7. Add feta to each bun and carefully crack an egg into the center.
  8. Bake for 15 to 18 minutes until egg whites are set.
  9. Sprinkle black pepper and additional feta if desired.
