Ingredients
- Cod fillets, 4 pieces (about 6 ounces each)
- Olive oil, 3 tablespoons
- Fresh lemon juice, 3 tablespoons (from about 1 medium lemon)
- Garlic, 3 cloves, minced
- Paprika, 1 teaspoon
- Salt, 1 teaspoon
- Black pepper, 1/2 teaspoon freshly ground
- Fresh parsley, 2 tablespoons, chopped
- Lemon slices, 1 lemon, thinly sliced
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together 3 tablespoons olive oil, 3 tablespoons fresh lemon juice, 3 cloves minced garlic, 1 teaspoon paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper until combined.
- Lightly grease a baking dish with a little olive oil or line it with parchment paper to prevent sticking.
- Place the 4 cod fillets in the prepared baking dish in a single layer. Pour the lemon-garlic mixture evenly over the fillets, using a spoon or brush to coat them. Lay thin lemon slices on top of each fillet.
- Bake uncovered in the preheated oven for 12 to 15 minutes, or until the cod flakes easily with a fork and appears opaque throughout.
- Optional, for a lightly golden top, broil for 1 to 2 minutes while watching closely to avoid burning.
- Sprinkle 2 tablespoons chopped fresh parsley over the fillets as a finishing touch, then serve immediately with extra lemon wedges if desired.
Notes
- Pat fillets dry before seasoning to remove excess moisture and help the seasoning adhere.
- Use freshly squeezed lemon juice for the brightest citrus flavor.
- Avoid overbaking; check at 12 minutes to prevent dryness.
