Ingredients

  • Cod fillets, 4 pieces (about 6 ounces each)
  • Olive oil, 3 tablespoons
  • Fresh lemon juice, 3 tablespoons (from about 1 medium lemon)
  • Garlic, 3 cloves, minced
  • Paprika, 1 teaspoon
  • Salt, 1 teaspoon
  • Black pepper, 1/2 teaspoon freshly ground
  • Fresh parsley, 2 tablespoons, chopped
  • Lemon slices, 1 lemon, thinly sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together 3 tablespoons olive oil, 3 tablespoons fresh lemon juice, 3 cloves minced garlic, 1 teaspoon paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper until combined.
  3. Lightly grease a baking dish with a little olive oil or line it with parchment paper to prevent sticking.
  4. Place the 4 cod fillets in the prepared baking dish in a single layer. Pour the lemon-garlic mixture evenly over the fillets, using a spoon or brush to coat them. Lay thin lemon slices on top of each fillet.
  5. Bake uncovered in the preheated oven for 12 to 15 minutes, or until the cod flakes easily with a fork and appears opaque throughout.
  6. Optional, for a lightly golden top, broil for 1 to 2 minutes while watching closely to avoid burning.
  7. Sprinkle 2 tablespoons chopped fresh parsley over the fillets as a finishing touch, then serve immediately with extra lemon wedges if desired.

  • Pat fillets dry before seasoning to remove excess moisture and help the seasoning adhere.
