Description

Light, bite-sized baked fritters studded with juicy blueberries and finished with a sweet glaze, perfect for breakfast, brunch, or an anytime treat.


Ingredients

  • All-Purpose Flour: 2 cups
  • Granulated Sugar: 1/2 cup
  • Baking Powder: 2 teaspoons
  • Salt: 1/4 teaspoon
  • Ground Cinnamon: 1/2 teaspoon
  • Milk (for batter): 3/4 cup
  • Large Egg: 1
  • Unsalted Butter, melted: 1/4 cup
  • Vanilla Extract: 1 teaspoon
  • Fresh Blueberries: 1 cup
  • Powdered Sugar (for glaze): 1 cup
  • Milk (for glaze): 2 to 3 tablespoons

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. In a medium bowl, whisk together 2 cups all-purpose flour, 1/2 cup granulated sugar, 2 teaspoons baking powder, 1/4 teaspoon salt, and 1/2 teaspoon ground cinnamon.
  3. In a separate bowl, whisk 3/4 cup milk, 1 large egg, 1/4 cup melted unsalted butter, and 1 teaspoon vanilla extract until combined.
  4. Gently fold the wet ingredients into the dry ingredients until just combined, taking care not to overmix.
  5. Toss 1 cup fresh blueberries lightly with a dusting of flour, then fold them gently into the batter.
  6. Spoon the batter into the prepared mini muffin tin, filling each cavity about three quarters full.
  7. Bake for 12 to 15 minutes, or until the fritter bites are golden and a toothpick inserted into the center comes out clean.
  8. While the bites cool slightly, whisk 1 cup powdered sugar with 2 to 3 tablespoons milk to make a smooth glaze.
  9. Drizzle the glaze over the slightly cooled fritter bites and let set briefly before serving.

Notes

  • Coat the blueberries in a little flour before folding them in to prevent them from sinking.
  • Do not overmix the batter to keep the fritters tender and airy.
  • For a brighter finish, add 1/2 teaspoon lemon zest to the glaze.
  • If using frozen blueberries, fold them in from frozen to avoid a soggy batter.
