Ingredients
- All-Purpose Flour: 2 cups
- Granulated Sugar: 1/2 cup
- Baking Powder: 2 teaspoons
- Salt: 1/4 teaspoon
- Ground Cinnamon: 1/2 teaspoon
- Milk (for batter): 3/4 cup
- Large Egg: 1
- Unsalted Butter, melted: 1/4 cup
- Vanilla Extract: 1 teaspoon
- Fresh Blueberries: 1 cup
- Powdered Sugar (for glaze): 1 cup
- Milk (for glaze): 2 to 3 tablespoons
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin.
- In a medium bowl, whisk together 2 cups all-purpose flour, 1/2 cup granulated sugar, 2 teaspoons baking powder, 1/4 teaspoon salt, and 1/2 teaspoon ground cinnamon.
- In a separate bowl, whisk 3/4 cup milk, 1 large egg, 1/4 cup melted unsalted butter, and 1 teaspoon vanilla extract until combined.
- Gently fold the wet ingredients into the dry ingredients until just combined, taking care not to overmix.
- Toss 1 cup fresh blueberries lightly with a dusting of flour, then fold them gently into the batter.
- Spoon the batter into the prepared mini muffin tin, filling each cavity about three quarters full.
- Bake for 12 to 15 minutes, or until the fritter bites are golden and a toothpick inserted into the center comes out clean.
- While the bites cool slightly, whisk 1 cup powdered sugar with 2 to 3 tablespoons milk to make a smooth glaze.
- Drizzle the glaze over the slightly cooled fritter bites and let set briefly before serving.
Notes
- Coat the blueberries in a little flour before folding them in to prevent them from sinking.
- Do not overmix the batter to keep the fritters tender and airy.
- For a brighter finish, add 1/2 teaspoon lemon zest to the glaze.
- If using frozen blueberries, fold them in from frozen to avoid a soggy batter.
