Description

Buttery avocado on crisp toast crowned with silky scrambled eggs and served alongside a burst of seasonal fresh fruit, a bright and nourishing café-style breakfast you can make in minutes.

Ingredients

Scale
  • 2 large slices sourdough or whole-grain bread
  • 1 medium ripe avocado, peeled and pitted
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon fine salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • 3 large eggs
  • 2 tablespoons milk or cream
  • 1 tablespoon unsalted butter
  • 1 cup mixed fresh fruit, sliced or whole (strawberries, blueberries, melon)
  • 1 tablespoon chopped fresh chives or parsley, optional

Instructions

  1. Preheat toaster or grill pan for bread and set a nonstick skillet over low heat.
  2. In a bowl, mash the avocado with lemon juice, 1/4 teaspoon salt, and a pinch of pepper until creamy.
  3. In a separate bowl, whisk eggs with milk or cream and the remaining 1/4 teaspoon salt until well blended and slightly frothy.
  4. Melt butter in the warm skillet, tilting to coat the surface evenly.
  5. Toast the bread until golden and crisp, then spread each slice generously with the avocado mixture.
  6. Pour the eggs into the skillet and cook low and slow, stirring gently with a spatula to form soft curds, 3 to 4 minutes.
  7. Top the avocado toast with the creamy scrambled eggs, finish with black pepper and herbs, and plate with fresh fruit on the side. Serve immediately.

Notes

  • Use a perfectly ripe avocado for the creamiest texture and richest flavor.
  • Cook eggs over low heat and stir often for soft, custardy curds.
  • Seasonal fruit makes the plate brighter and juicier, swap based on what is best.
  • Add a pinch of chili flakes or a drizzle of olive oil for extra zip.
  • Press plastic wrap directly on any leftover avocado to slow browning.
