Instructions
- Preheat toaster or grill pan for bread and set a nonstick skillet over low heat.
- In a bowl, mash the avocado with lemon juice, 1/4 teaspoon salt, and a pinch of pepper until creamy.
- In a separate bowl, whisk eggs with milk or cream and the remaining 1/4 teaspoon salt until well blended and slightly frothy.
- Melt butter in the warm skillet, tilting to coat the surface evenly.
- Toast the bread until golden and crisp, then spread each slice generously with the avocado mixture.
- Pour the eggs into the skillet and cook low and slow, stirring gently with a spatula to form soft curds, 3 to 4 minutes.
- Top the avocado toast with the creamy scrambled eggs, finish with black pepper and herbs, and plate with fresh fruit on the side. Serve immediately.
