Description

Creamy avocado and chopped hard-boiled eggs seasoned with lemon and green onion, rolled into soft tortillas for an easy, fresh handheld lunch or snack.

Ingredients

Scale
  • 4 large hard-boiled eggs, chopped
  • 2 medium ripe avocados, peeled and mashed
  • 2 tablespoons Greek yogurt or mayonnaise
  • 1 tablespoon fresh lemon juice
  • 2 green onions, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 4 lettuce leaves, optional for crunch

Instructions

  1. Preheat Your Equipment: No heat required, simply gather your mixing bowl, fork, knife, and cutting board.
  2. Combine Ingredients: In a mixing bowl, mash the avocados with a fork until creamy. Add chopped eggs, Greek yogurt or mayonnaise, lemon juice, chopped green onions, salt, and black pepper. Stir until combined and taste to adjust seasoning.
  3. Prepare Your Cooking Vessel: Lay each tortilla flat on a clean cutting board ready for filling.
  4. Assemble the Dish: Spread the avocado-egg salad evenly over each tortilla, leaving about 1 inch clear at the edges. Top with a lettuce leaf if using.
  5. Cook to Perfection: There is no cooking step. Roll each tortilla tightly from one end to the other to form a wrap.
  6. Finishing Touches: Wrap each roll tightly in plastic wrap and chill for 15 to 30 minutes for cleaner slices or slice immediately into halves or pinwheels.
  7. Serve and Enjoy: Arrange on a platter and serve chilled or at room temperature. Enjoy right away or store wrapped in the refrigerator for up to 24 hours.

Notes

  • Use ripe but firm avocados to avoid a watery or mushy filling.
  • Add a squeeze of extra lemon if you plan to store the filling to slow browning.
  • For a creamier texture, use mayonnaise instead of Greek yogurt.
  • Chill wrapped roll-ups for easier slicing and neater presentation.
