- 2 tablespoons green onions, sliced
- 2 tablespoons cilantro, chopped

Instructions
- Cook rice noodles according to package instructions, then drain and set aside.
- In a large pot bring chicken broth to a gentle simmer.
- Add garlic, ginger, and soy sauce to the broth.
- Add sliced mushrooms and cook for a few minutes until softened.
- Add shrimp and cook until pink and tender.
- Stir in lime juice.
- Add cooked rice noodles to the pot.
- Ladle the soup into bowls.
- Top with green onions, cilantro, and chili flakes if desired.
- Serve hot and enjoy.
