Ingredients

  • 200 g rice noodles
  • 4 cups chicken broth

  • 2 tablespoons lime juice
  • 1 cup mushrooms, sliced
  • 2 tablespoons green onions, sliced
  • 2 tablespoons cilantro, chopped
  • ½ teaspoon chili flakes (optional)

Instructions

  1. Cook rice noodles according to package instructions, then drain and set aside.
  2. In a large pot bring chicken broth to a gentle simmer.
  3. Add garlic, ginger, and soy sauce to the broth.
  4. Add sliced mushrooms and cook for a few minutes until softened.
  5. Add shrimp and cook until pink and tender.
  6. Stir in lime juice.
  7. Add cooked rice noodles to the pot.
  8. Ladle the soup into bowls.
  9. Top with green onions, cilantro, and chili flakes if desired.
