- 1 cup unsweetened applesauce
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it well.
- In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, mix applesauce, granulated sugar, brown sugar, egg, oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix just until combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 18 to 22 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use unsweetened applesauce for better control of sweetness.
- Sprinkle cinnamon sugar on top before baking for added flavor and crunch.
