- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup plain Greek yogurt
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 medium apples, peeled and diced
Instructions
- Preheat your oven to 350°F (175°C). Line a 9-inch round cake pan with parchment paper and grease the sides.
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In a separate bowl, whisk the eggs, sugar, yogurt, oil, and vanilla until smooth.
- Gently fold the dry ingredients into the wet mixture until just combined. Stir in the diced apples.
- Pour the batter into the prepared pan and smooth the top. Optionally, add thin apple slices on top for decoration.
- Bake for 45–50 minutes or until a toothpick inserted comes out clean and the top is golden brown.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired.
Notes
- Use firm apples like Honeycrisp or Granny Smith for best texture.
- Toss apple chunks in a little flour before adding to batter to prevent sinking.
- Let the cake rest overnight for enhanced flavor and moisture.
