Description

Ingredients

  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9-inch round cake pan with parchment paper and grease the sides.
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk the eggs, sugar, yogurt, oil, and vanilla until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Stir in the diced apples.
  5. Pour the batter into the prepared pan and smooth the top. Optionally, add thin apple slices on top for decoration.
  6. Bake for 45–50 minutes or until a toothpick inserted comes out clean and the top is golden brown.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired.
