Description

Aji Verde, the iconic Peruvian green sauce, is a creamy and spicy blend of cilantro, aji peppers, lime, and garlic. This vibrant condiment adds freshness and zest to grilled meats, potatoes, and more, bringing a taste of Peru right to your table.


Ingredients

  • 2 cups fresh cilantro, loosely packed
  • 12 tablespoons aji amarillo paste or 12 jalapeño peppers, seeds removed
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 2 garlic cloves, peeled
  • 2 tablespoons Parmesan cheese
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt, or to taste
  • 12 tablespoons water, as needed

Instructions

  1. Prepare your blender or food processor and gather all ingredients.
  2. Add cilantro, aji paste or jalapeños, garlic, mayonnaise, Parmesan cheese, lime juice, and olive oil into the blender.
  3. Blend until smooth, adding water gradually to reach desired consistency.
  4. Taste and adjust salt and lime juice as needed.
  5. Pour sauce into a jar and chill for at least 30 minutes before serving.
