Description
Perfectly crispy air fryer roast potatoes with golden crunchy edges and fluffy centers. A simple and reliable side dish that delivers classic roast potato texture in less time and with less oil.
Ingredients
Scale
- 2 pounds potatoes (about 900 grams), peeled and cut into even chunks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1 teaspoon dried rosemary (optional)
Instructions
- Preheat the air fryer to 400 degrees Fahrenheit.
- Place the peeled and chopped potatoes into a large pot of salted water. Bring to a boil and cook for 8 to 10 minutes until just fork tender.
- Drain the potatoes in a colander and shake gently to rough up the edges. Let them steam dry for 5 minutes.
- Transfer the potatoes to a mixing bowl and toss with olive oil, salt, black pepper, garlic powder, and dried rosemary if using.
- Arrange the potatoes in a single layer in the air fryer basket without overcrowding.
- Cook for 18 to 22 minutes, shaking the basket halfway through, until golden and crispy.
- Serve immediately while hot and crisp.
Notes
- Do not overcrowd the basket to ensure even crisping.
- Roughing up the potatoes after boiling helps create crisp edges.
- Reheat leftovers in the air fryer at 375 degrees Fahrenheit for 5 to 7 minutes to restore crispness.
- Use floury potatoes like Yukon Gold for best texture.
