Description

Crispy toast topped with creamy avocado smash and a perfectly cooked air fryer poached egg, finished with a touch of spice and freshness for a quick and satisfying breakfast.


Ingredients

  • 2 thick slices bread, toasted
  • 1 large ripe avocado, peeled and pitted
  • 2 large eggs
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red chili flakes, optional
  • 2 tablespoons water

Instructions

  1. Preheat the air fryer to 350°F (175°C) for 3 minutes.
  2. Mash the avocado in a bowl with lemon juice, olive oil, salt, and black pepper until smooth but slightly chunky.
  3. Lightly grease two small ramekins and add 1 tablespoon of water to each. Crack one egg into each ramekin.
  4. Toast the bread slices until golden and crisp.
  5. Place the ramekins in the air fryer and cook for 5 to 6 minutes, depending on desired yolk consistency.
  6. Spread the avocado smash evenly over each slice of toast.
  7. Carefully remove the eggs from the ramekins and place one on each toast.
  8. Sprinkle with red chili flakes if desired and serve immediately.
