- 2 chicken fillets
- 4 cups chopped romaine lettuce
- 1 medium sweet potato, diced
- 2 tablespoons olive oil
- ¼ cup shaved parmesan cheese
- ½ cup Caesar dressing
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the air fryer to 190°C and the oven to 200°C.
- Toss diced sweet potatoes with 1 tablespoon olive oil, a pinch of salt, and black pepper.
- Spread sweet potatoes on a baking sheet and roast for about 20 minutes until tender and lightly caramelized.
- Season the chicken fillets with garlic powder, paprika, salt, and pepper.
- Lightly brush or spray chicken with the remaining olive oil.
- Place chicken in the air fryer basket and cook for about 12 minutes until crispy and cooked through.
- Allow chicken to rest briefly, then slice into strips.
- Place romaine lettuce in a large bowl.
- Add roasted sweet potatoes and sliced chicken.
- Drizzle with Caesar dressing, sprinkle parmesan cheese on top, toss gently, and serve.

- Do not overcrowd the air fryer to keep the chicken crispy.
- Add dressing right before serving to keep lettuce fresh and crisp.
